Yoghurt cheese

I know the title of this post sounds incredibly strange. However, I made too much yoghurt…again! So I needed to find something to do with it. Next time I will be making lollipops. This time, I went for cheese!
It isn’t proper cheese, it’s not even the same texture as soft cheese. However, spread on toast it does the same job as a normal every day soft cheese.
So, it’s simple enough, place muslin or a clean teatowel into a strainer, line it carefully and place it on top of a bowl. Pour some plain, natural yoghurt into the tea towel and then leave it to drain in the fridge.
You can leave it for as long or as shorter time as you want, it just depends how thick you want the result! I left mine for about 24 hours and this was the result
