Banana Pancakes with Bacon and Maple Syrup

So my partner was finally off work on a morning we could actually do a family breakfast on! So I made pancakes, my absolute guilty pleasure. This recipe is perfect as it invloves his favourite, bacon, and a large amount of maple syrup. The fact that there is banana in there too makes it feel slightly healthier than it probably is!


150g plain flour

1 1/2 tsp baking powder

1 tbsp caster sugar

1 egg

Pinch of salt

2tbsp melted butter

3 bananas

250ml milk

Bacon, as much or as little as you want

Maple syrup, same as above, none all the way up to a bottle full, your choice


1. Mix together the flour, baking powder, sugar, egg,  salt, butter and milk until you have a thick smooth batter.

2. Chop the banana into chunks, add to the batter and mash it in with a potato masher.

3. Cook the bacon until crisp while you heat a frying pan, add a little oil and cook spoonfuls of the banana batter until it’s all gone!

4. Plate up, add the bacon, cover in maple syrup and more chopped banana if you want!

A yummy breakfast that didn’t take too long to make and really hit the spot!
