Blackberry Pancakes

2013-02-25 09.11.01I have to admit that in this photo they don’t look like anything special! But when you never get to have a family breakfast and therefore never really have an excuse to make pancakes (especially pancakes as yummy as these), then it’s a big thing! This was made better by the fact that the blackberries came from my dad’s allotment during last summer.



150g Plain Flour

1 1/2 tsp Baking Powder

Pinch of Salt

250ml Milk

1 Large Egg

2tbsp Sunflower Oil

140g Blackberries


1. Sift flour, sugar, baking powder and salt into a bowl. Add milk, egg and oil and whisk until smooth. Stir in the blackberries then leave to stand for 5 or 10 minutes.

2. Grease a pan, add spoonfuls of the mixture, cook until golden underneath and set on top, then flip. Serve hot with lots of syrup!
