So, for dinner tonight are the simple but delicious sultana scones, pretty much my son’s favourites. You can kind of see why when they’re covered in homemade jam! (well my mum makes it, not me!)
225g self raising flour
Pinch of salt
25g caster sugar
Approx 100ml milk
*Oven 220c. Grease a baking tray.
1. Mix flour and salt, then rub in the margarine.
2. Add most of the milk and egg, but keep a little back for brushing on top of the scones, male a dough.
3. Knead, roll out to around 1.5cm thick, cut out with a 7cm cutter. Do not twist as you cut as this stops them rising.
4. Put on the baking tray, brush the tops with the remaining egg and milk. Bake for 10 minutes.
